Herbs and Spices and Everything Nice

When you are a Sugar artist, sometimes you only think about sugar when doing your work.  What type of medium do you want to use for your latest project.  What type of tools do you want to use? But that is only part of the project.  When you are baking, do you think about what herbs, spices or condiments you might want to use?  While this doesn’t sound like a ‘sugar’ element, it’s very important to make sure your projects turn out the best!
