PME Diploma and Master’s Certificate!

Are you certifiably crazy for cake decorating? No? Well, you are in luck! This fall Chef Nicholas Lodge is offering three classes with PME certification! PME Diplomas and Master’s Certificates are internationally recognized awards and they are designed as professional level cake decorating courses.

There are three individual courses: Royal Icing, Gumpaste Flowers, and Rolled Fondant Techniques. Upon completion of each of the courses, a PME diploma is awarded to each student; if all three courses are completed a Master’s Certificate is awarded! Um… that’s awesome. I have a Masters degree in Art History and Archaeology. Cool, but not delicious as a masters certificate in CAKE! (Click any of the green links to take you to the class sign up pages)

How can you get your own fancy and impressive PME Diploma and Master’s Certificate? I’m so glad that you asked! As I said above, we are offering ALL THREE certification classes this fall. That’s right you could be hanging your diplomas on your bakery (or office) wall in less than a month! Our first PME offering is the 3-Day Advanced Royal Icing Techniques. This class is so popular that we actually have two dates for this class: September 8-10, and October 25-27! This is a pretty amazing class, and you learn A LOT of techniques: covering a cake smoothly with royal icing, color flow, run out, lace and filigree, Wedgewood style figure piping, Lambeth and English style border, and string work! (This class would also be a wonderful primer for the Winter Nirvana class with Julia Cullen in October!)

The next class is the 5-Day Ultimate Flower Class, September 15-19. This class really is the ultimate- you learn nearly 20 flowers in a short period of time. This class focuses on popular flowers- focal, secondary, and filler flowers, and foliage (as well as some buds and leaves). This is a great class if you are coming from out of town; you will be able to learn so many often requested flowers in one quick trip to Atlanta AND you get another PME Diploma!

A PME 2014 Master Class

The final class in the PME certification program is the Rolled Fondant Techniques class, October 22-24. Even though this is a professional level course, it is a good place to start if you are interested in learning how to use rolled fondant or if you want to expand your knowledge of rolled fondant. Some of the techniques that Chef Nicholas will teach you in this class are embossing, quilting (very popular right now), embroidery, applique and inlay, lace, painting on rolled fondant, adding ribbons. You will also learn how to use different kinds of molds to make decorations. Don’t forget, you get another PME Diploma!

The Rolled Fondant and Royal Icing classes are being offered back to back in October, so if you are interested in both you can complete both classes in one shot (so to speak). If you have already completed one or two of these classes (I’m talking to you- I know a lot of our readers have taken some of these classes!), now is your chance to complete the one(s) you are missing to earn your Master’s Certificate! As mentioned (a lot) above, each class you complete earns you a PME Diploma, and once you complete all three you receive your Master’s Certificate. You will also receive Nicholas Lodge’s International Sugar Art Collection certificates for each one you complete. That’s like getting two degrees in each class! Like I said, CERTIFIABLY CRAZY FOR CAKE!

  3. All three will not be offered back to back this year. We are currently working on our 2015 schedule, and we will try our best to schedule a series of PME classes together!

  4. Is it possible that these can be done how the craftsy classes are conducted.i am based in nigeria, Africa and I don’t know when I would have an opportunity to be in the same classroom as chef Nicholas.

  5. Hi nkiruka- I’m sorry to say that these three classes are not offered on Craftsy; they are only available in my classroom in the US. Craftsy classes are online classes that are pre-recorded- once you purchase the class you can watch it over and over again.
