August Classes!


We have a month packed full of classes this August! We have two classes with our very own Chef Nicholas Lodge (yay!), and two classes with Chef Joseph Cumm. I have written about Chef Joe’s classes, but we have had a change to one of the classes that I think you will all be very interested to hear about. Before I tell you all about the new class projects that Chef Joe will be teaching, let’s talk about Chef Nicholas’ two August classes!

 Early in August, from the 10th through the 12th, Chef Nicholas will be offering another module of the Renshaw Academy series! This time it is the Renshaw Academy Sugar Flower Module, and in this course, students will be learning how to create botanically accurate Calla Lilies, Anemones, Bouvardia, Forget-Me-Nots, berries, trailing foliage, and the iconic rose. Students will learn how to craft all stages of a rose from tight buds to fully blown blooms. This will be the last offering of this class in 2018; and just as a reminder, not only will you get your International Sugar Art Collection diploma, you will also get your Renshaw Academy diploma! If you have taken the other two Renshaw Academy modules (the Royal Icing or Rolled Fondant), you should sign up for this class to complete your Master Certificate!!

Just six days after the Renshaw Academy Sugar Flower Module ends, Chef Nicholas will be jumping into his most popular class: 5-Day Ultimate Gumpaste Flowers, from August 18-22, 2018! This class is not only popular stateside, but it is also a favorite of our international students. Why? Excellent question! It’s popular because students are learning 18 flower varieties in only 5 days. I know I have said it before, but it really is A LOT of flowers for the time! All of the most popular flowers are taught in this class- just another reason it is so popular. So, if you want to make the Ultimate Rose, Stargazer Lily, Calla Lily, Cattleya Orchid, Cymbidium Orchid, Dendrobium Orchid, Gardenia, Gerber Daisy, Lizianthus, Hydrangea, Stephanotis, Lily of the Valley, Sweet Peas, Carnations, Daisies, Eucalyptus, Ferns, and Ivy, then this is a class for you. Oh, and where appropriate, buds and leaves will be included.

If you have been considering taking a class with Chef Nicholas, these would be two amazing classes to take. Chef Nicholas is THE pioneer of perfectly rendered sugar flowers- you will be learning from the master. It will be worth your time and the experience and skills you will gain. 

If you are more into baking than decorating, consider Chef Joseph Cumm’s two classes held in Studio B this August. Originally, both of the classes were set to offer the same projects- tea party pastries. Chef Joe will still be teaching Tea Party Pastries on August 26, 2018; this class will include Mini-Opera Cakes, Assorted Tartlets, Rugelach, Cookies, Scones and more! All very yummy sounding. However, Chef Joseph decided to change the first class to a French Macaron and Chocolate Bon Bon class!

French Macarons and Chocolate Bon Bons are two of Chef Joseph’s most popular classes. Last year he offered a single 1-day French Macaron class. It was so insanely popular that we ended up filling up FOUR French Macaron classes! Due to that popularity, Chef Joseph thought it may be prudent to offer it again. BUT, this time he’s throwing in CHOCOLATE! In addition to learning how to make those notoriously difficult macarons, Chef Joseph is also teaching students how, and why, to temper chocolate. This class will be offered on August 25, 2018. 

Bon Bons and French Macarons!

Both of Chef Joseph’s classes are one-day classes, and they are offered over a weekend, come and hang out with us and make some yummy desserts to take home and share! Sign up for one, or sign up for both! Chef Joseph is one of our most popular visiting instructors and his classes fill fast!
