March Madness usually refers to the big college basketball tournament here in America. I am using it to discuss the class schedule at ISAC this March! We have three guest instructors in March teaching a total of five classes, Spring Open House, one Chef Nicholas class in Texas, and two Chef Nicholas classes at ISAC. AND, one of the classes at ISAC is part of the BRAND NEW Renshaw Academy series! Let me tell you about all of our March classes, and hopefully you will find a class that you’d like to register for. 

 Nicholas starts off March by teaching a class in Houston, Texas on March 3 and 4, 2018. Appropriately titled, Springtime in Texas Chef Nicholas will be teaching students how to make flowers that can be found in during a warm Texas spring: Bearded Iris, Cherry Blossoms, Dogwood, Forsythia, Longiflorum Lily, and the Parrot Tulip.

Just six days later, Chef Nicholas, Scott and the ISAC family will be hosting our annual Spring Open House! This year we are welcoming guest instructors Chef Joseph Cumm and Chef Sachiko Windbiel! Chef Nicholas always keeps his projects a secret (even from us), but I can share that Chef Joseph will be demonstrating beautiful chocolate eggs, and Chef Sachiko will be creating an adorable baby in a bunny outfit! If you haven’t yet signed up for our Spring Open House event on March, 10, 2018, time to get moving! The 9am session has already sold out, but there are still seats available in the afternoon session.

Both Chefs Joseph and Sachiko will be staying on after the Open House event to teach classes. Chef Joseph will be teaching a 1-day class covering Basic Chocolate Techniques and Mirror Glaze. Chef Sachiko will be teaching three different 1-day classes! All three classes include standing, 3D figures: Fairy Girl, Cute Wedding Couple, and Springtime Floral Dress Girl. All of these classes by Chef Joseph and Chef Sachiko provide all the necessary tools, lunch, and of course (my favorite) cookie time!

Just four days after Chef Sachiko’s last class, March 17-18,  ISAC hosts another superstar of the cake decorating world: Chef Dorothy Klerck! Our favorite South African will be teaching her Mighty Pegasus cake! This is a huge (a foot and a half tall), 3D, gravity defying flying unicorn Pegasus cake! Um…. wow. In this class you will learn how to design a cake from drawing to completion. Starting with a detailed section on designing your cake and calculating correct proportions, how to create side, front, and top templates that fit together, and how to design a secure structure. Chef Dot will show you step-by-step how to carve, sculpt, and complete your cake. You will learn how to sculpt this Might Pegasus and how to shade and hand paint the finishing details.

March wraps up with two back to back Chef Nicholas classes at ISAC. March 24-26 is the first ever Renshaw Academy class at ISAC! This sugar flower class is one of three modules for the new Renshaw Academy program; upon completes of all three modules a Renshaw Academy Master certificate is awarded. Chef Nicholas will teach students how to create several amazing sugar flowers including Roses created in various stages from tight buds to fully blown, Calla Lily, Anemone, Bouvardia, Forget Ne Not, Berries and Trailing Foliage. Once completed you will arrange them into a beautiful wired spray accented with ribbons. This class will go into a lot of detail on creating sugar flowers for production, pricing breakdown and teaching you how to artfully wire various sprays together to create stunning wedding and celebration cakes. All of the flowers, berries and foliage can be re-created in different colors suitable for any season or reason.

Finally, Chef Nicholas finishes up our March classes with a special edition class. Springtime Gumpaste Flowers is a class that Chef Nicholas has taught before, but not in several years. This class is only back due to popular demand by our students. Come and learn five gorgeous spring flowers: daffodil, pink tulip, magnolia, cherry blossoms, and the dogwood.
