The Size Guide, created by Nicholas Lodge, features 16 round openings to aid the decorator in creating the proper size of gumpaste or rolled fondant for a project. Typically you would begin with 2/3 of the ball above the top of the guide with 1/3 extending below, unless stated differently in the instructions.
