“Rolled Fondant for the Holidays”
Students will learn how to cover a cake with rolled fondant and then decorate with lots of holiday decorations. Ideas presented in class can be adapted to buttercream cakes and also used on gingerbread houses. The cake will include a garland decorated with mini holly, gingerbread men, apples, hearts and teddy bears. A piped garland with paste ribbons and bows, stars and reindeer bells, half-relief decorated Christmas trees, bells and holiday lace will be but a few of the additional items featured and covered during this two-day class. Featured will be lots of other ideas using new products too!

“Gumpaste for the Holidays”
This class will feature students creating in gumpaste a life-size poinsettia, holly & berries, variegated holly & berries, English ivy and variegated ivy, eucalyptus, fir & cones, pine cones, juniper & yew and the Christmas Rose.

The completed items will be assembled into a finished spray complete with holiday ribbons. Items created in this class can be used as a holiday table centerpiece or a cake top as well…numerous ideas will be shared!

National Gingerbread House Competition
Monday, November 17

Each year contestants from across the United States gather at the historic Grove Park Inn located in Asheville, North Carolina for the annual, "National Gingerbread House Competition." Nicholas will once again be one of the guest judges. Last year over $5,000 in prizes and gifts were awarded. Due to the overwhelming response to our recent Holiday Open Houses, we are expanding the event to two days!

Come join Nicholas, Scott and the entire staff of The International Sugar Art Collection as we kick off the Holiday Season with two special days at ISAC.

Each day will be filled with lots of decorating ideas that can be used on your holiday cakes, cookies, candies, confections and gingerbread houses.

Nicholas will be on hand demonstrating quick and easy holiday ideas for use on cakes with gumpaste and rolled decorations.

Scott will once again be demonstrating a variety of fun, fast, easy and delicious chocolates and candies that make excellent holiday gifts for friends, co-workers and family gatherings.

Refreshments will be on hand for everyone to enjoy. Please stop by for a gingerbread cookie and a cup of cheer to get you into the holiday spirit!

There is no charge for our open house. Please bring your friends and neighbors to enjoy the festivities!

(Please Note: Due to demonstrations using hot sugar mixtures, extremely hot equipment, large crowds, and for the safety, comfort and enjoyment for everyone, we ask that small children and babies in strollers not attend the open house. Thank you for your understanding.)

"Cake Cruise"
December 13-20, 2008

Once again Nicholas will be demonstrating and teaching sugar art on the high seas on another "Cake Cruise!" This year Nicholas will be joined by fellow instructors Toba Garret and B. Keith Ryder. Together, this trio will present various demonstrations and classes while aboard the brand new Holland America ship, the MS Eurodam which will be cruising through the Caribbean Islands. The 2007 Cake Cruise through the inside passage from Seattle to Alaska had 149 cake people registered on board. The 2008 cruise is sure to be just as much fun and even more informative! Important Class Information
Class Registration / Cancellation / Policies:
  • We require a non-refundable registration fee be paid at the time of registration for each class you register for. The registration fee is applied towards your class fee.  Class registrations and cancellations cannot be accepted by email.
  • Two and three day classes require a $50.00 registration fee and five day classes require a $100.00 registration fee.
  • The balance of your class fee is due 14 days prior to the beginning of the class.
  • Class fees may be paid by money order or by credit card. We accept Visa, MasterCard, Discover and American Express.
  • Registration fees and class fees are not refundable due to a student being “a-no-show.”
  • If cancellation is made more than fourteen (14) days prior to the start of the class, class fees only will be refunded to the student.
  • If it becomes necessary to cancel a class of any kind due to low enrollment, all prepaid fees will be refunded. The school does not accept responsibility for airline cancellation penalties or other expenses incurred due to class cancellation. Every attempt will be made to cover all of the material outlined in the class description. However, due to unavoidable situations, it may be necessary to change the class outline due to time limitations and other situations.
  • All class sessions include a light lunch each day, as well as morning and afternoon coffee, bottled water and soft drinks.
  • The classroom is opened by 8:30 on class mornings. Most students arrive around 9:00 enabling them to get settled in (and have a cup of coffee) before class begins at 9:30.
  • Class is scheduled to end each day at 5:30, but may go longer. Please plan on an additional hour on the last day to allow time to complete the class project, pack up your work, etc.
  • For those of you who will be flying into Atlanta to attend class, we suggest that you book your return flight no earlier than 8:00 P.M. of the last day of class. This will allow time to finish class work, pack your completed project and allow travel time to the airport.
  • For the consideration of others, video cameras, beepers and cellular phones are not allowed in the classroom.
