"Sewing Basket and Under the Sea Cakes"
The “Under the Sea Cake” will be a mini cake decorated in an under-the-sea theme. With movies like “Finding Nemo” and “Sharks Tale,” along with wedding cakes created for beach locations, this style of cake is sure to be a hit at your next event. The cake will include coral, fish, turtles, sea horses, sand, pearls, shells and sand dollars. Students will be using molds and cutters, and as a bonus, will learn how to create their own silicone molds.

The “Sewing Basket Cake” will be an adorable sewing basket filled with ribbons, lace, spools of thread, scissors, thimbles, buttons and needles. The base of the cake can be used for lots of other occasions like quilting, scrap booking, gardening, etc. Many tips and ideas will be shared.

"French Purse Cake"
This is one of the most popular cake classes taught by Nicholas! The purse will be decorated in toile and French stripe designs with a fleur-de-lis clasp, lace work, Patchwork Cutter tulips and script lettering on the cake board. This display is sure to get you an "oh-la-la" at your next party! Other styles of purses will be discussed during the class.

 "Flower Fairy & Clematis Cake”
You have asked for it and here it is! This it the French purse cake Nicholas created and displayed at the 2005 ICES Convention in New Orleans. The purse will be decorated in toile and French stripe designs with fleur-de-lis clasp, lace, Patchwork Cutter tulips and lettering on the cake board. This display is sure to get you a “oh-la-la” at your next party! Other styles of purses will be discussed during the class.

 "Mini Topsy-Turvy and Mini Gift Package Cake”
Create two fun cakes during this one-day class! A midi whimsical topsy turvy cake that will be presented on a small decorative plate and a mini gift package cake. During the class Nicholas will explain the process of creating these cakes in a larger format style.

 "Ultimate Gumpaste Rose Class”
Learn all the roses you ever wanted to know how to create in gumpaste! This complete class will include the quick rose, specimen rose, wild rose, fully blown Harrison's Yellow (Yellow Rose of Texas,) old fashioned rose, toothpick roses, roses made with individual petals and miniature types of roses. Buds and leaves will also be included.

Nicholas will be teaching two one day class sessions. Saturday will feature the, "Flower Fairy and Clematis Cake." On Sunday, students will create a "Fashion Cake" which will feature purses, shoes and fashion accessories.

 "New Rolled Fondant Techniques" - Special Guest Instructor Margaret Ford
Margaret will be making her yearly appearance once again at ISAC! This year, something different…Rolled Fondant Techniques. During the two days Margaret will lead students through covering a dummy cake with rolled fondant. Next, a stenciled design will be created with new and unique "stick-on" stencils. The side designs will be created with paste relief, and the borders will be created with some newly designed CelShape molds. The top of the cake will be finished with gumpaste orchids and fine ribbon bows accented with another stenciled design made by using the new Sugar Silk Paste from Brazil.

Important Class Information
Class Registration / Cancellation / Policies:
  • We require a non-refundable registration fee be paid at the time of registration for each class you register for. The registration fee is applied towards your class fee.  Class registrations and cancellations cannot be accepted by email.
  • Two and three day classes require a $50.00 registration fee and five day classes require a $100.00 registration fee.
  • The balance of your class fee is due 14 days prior to the beginning of the class.
  • Class fees may be paid by money order or by credit card. We accept Visa, MasterCard, Discover and American Express.
  • Registration fees and class fees are not refundable due to a student being “a-no-show.”
  • If cancellation is made more than fourteen (14) days prior to the start of the class, class fees only will be refunded to the student.
  • If it becomes necessary to cancel a class of any kind due to low enrollment, all prepaid fees will be refunded. The school does not accept responsibility for airline cancellation penalties or other expenses incurred due to class cancellation. Every attempt will be made to cover all of the material outlined in the class description. However, due to unavoidable situations, it may be necessary to change the class outline due to time limitations and other situations.
  • All class sessions include a light lunch each day, as well as morning and afternoon coffee, bottled water and soft drinks.
  • The classroom is opened by 8:30 on class mornings. Most students arrive around 9:00 enabling them to get settled in (and have a cup of coffee) before class begins at 9:30.
  • Class is scheduled to end each day at 5:30, but may go longer. Please plan on an additional hour on the last day to allow time to complete the class project, pack up your work, etc.
  • For those of you who will be flying into Atlanta to attend class, we suggest that you book your return flight no earlier than 8:00 P.M. of the last day of class. This will allow time to finish class work, pack your completed project and allow travel time to the airport.
  • For the consideration of others, video cameras, beepers and cellular phones are not allowed in the classroom.
