“Three Day Introduction to Rolled Fondant”
During this class you will learn many different decorating techniques used on rolled fondant cakes. Many of the techniques can be used or adapted for buttercream and rolled buttercream cakes as well. You will be working on two dummy cakes that you will take home after class for future reference.

Techniques covered will include: covering a cake dummy with rolled fondant, crimping, embossing, quilting, embroidery, brush embroidery, appliqué work, lace work, painting on a cake, using various molds in creating quick cake decorations, ribbon insertion, drapes and bows, ribbons, ropes and tassels…just to name a few! This is a great class if you want to get involved in rolled fondant or if you need guidance and new ideas in expanding the techniques you already are using.

“Baby Shower & Baby Cake Ideas”
This two-day class will focus on decorating ideas with the little one in mind. Students will create an adorable "baby-under-a-blanket," gumpaste baby shoes, tulle baby shoes, baby cradle, mini-baby toys and various decorations. All of the designs and ideas can be used on cakes, cupcakes or pettis fours. This great class if full of great ideas! Don't miss it!

NEW CLASS
"Ladies Shoes & Purse Cake and Pirates Cake"
The title says it all! This two day class will feature students creating two very different styles of cakes. The first cake will be a dummy cake that students will cover with rolled fondant. Next, a shoe and purse will be created with rolled fondant and gumpaste and decorated and highlighted with accessories created from gumpaste.

The very different second cake will be based on the Pirate Cake that Nicholas displayed at the 2007 ICES Convention in Omaha, Nebraska. A rolled fondant covered dummy cake will be transformed into a swashbuckling pirate, complete with his treasure chest of booty and pirate ship.

Both of these subjects are very different, but cover a wide variety of different decorating techniques that can easily be used on other cakes for women, men, boys and girls, for birthdays, holidays, celebrations and parties.

World Pastry Forum in Nashville, Tennessee at the Gaylord Opryland Hotel. Nicholas Lodge will be teaching a combined five day class with the dynamic personality of Colette Peters. Each student will spend 2 ½ days each with Nicholas and Colette for a total of 5 days of instruction on wedding cake and gumpaste techniques. Important Class Information
Class Registration / Cancellation / Policies:
  • We require a non-refundable registration fee be paid at the time of registration for each class you register for. The registration fee is applied towards your class fee.  Class registrations and cancellations cannot be accepted by email.
  • Two and three day classes require a $50.00 registration fee and five day classes require a $100.00 registration fee.
  • The balance of your class fee is due 14 days prior to the beginning of the class.
  • Class fees may be paid by money order or by credit card. We accept Visa, MasterCard, Discover and American Express.
  • Registration fees and class fees are not refundable due to a student being “a-no-show.”
  • If cancellation is made more than fourteen (14) days prior to the start of the class, class fees only will be refunded to the student.
  • If it becomes necessary to cancel a class of any kind due to low enrollment, all prepaid fees will be refunded. The school does not accept responsibility for airline cancellation penalties or other expenses incurred due to class cancellation. Every attempt will be made to cover all of the material outlined in the class description. However, due to unavoidable situations, it may be necessary to change the class outline due to time limitations and other situations.
  • All class sessions include a light lunch each day, as well as morning and afternoon coffee, bottled water and soft drinks.
  • The classroom is opened by 8:30 on class mornings. Most students arrive around 9:00 enabling them to get settled in (and have a cup of coffee) before class begins at 9:30.
  • Class is scheduled to end each day at 5:30, but may go longer. Please plan on an additional hour on the last day to allow time to complete the class project, pack up your work, etc.
  • For those of you who will be flying into Atlanta to attend class, we suggest that you book your return flight no earlier than 8:00 P.M. of the last day of class. This will allow time to finish class work, pack your completed project and allow travel time to the airport.
  • For the consideration of others, video cameras, beepers and cellular phones are not allowed in the classroom.
